Every Saturday night our Master Chef David Bres creates a delicious
3-course set menu for $55.

The menu is themed around a secret ingredient that will only be revealed on Saturday nights.

We encourage our valued guests to actively participate and challenge our chefs by selecting the secret ingredient. It can be an herb, a particular flavour, a condiment or anything other than the meat or fish component of the main course.

You can email us or ring our Maitre D' Stephanie to place your challenge. The decision to take up your challenge is at David's discretion, and if he does so, he will let you know on which Saturday he will craft his menu around your secret ingredient.

Of course, if you do not wish to place a challenge, you will also be most welcome to sample David's special menu on any Saturday night.

we have been seeing a lot of eagle rays jumping from the water latley

also the osprey eagles are hunting the fish on top of the water right in front of the kayaks and there have been many blue spot lagoon rays in front of the double island resort along with 1 pair of long fin bat fish who seem to have taken up residents at the exclusive resort

Rainforest Rescue will be continuing with their amazingly successful Plant a Rainforest Project in the Daintree from the 22nd to the 26th of June and from the 29th of June to the 3rd of July. The trees have grown incredibly well in the tropical climate. If you live in or will be visiting the Daintree during that time please come along and join us. For exact locations of the plantings on each day please contact our Conservation Manager David Cook on 0407 178 495 or email david@rainforestrescue.org.au. If you can't make it to the Daintree remember you can always sponsor additional trees to make our forest grow.

You will then be taken to your spacious apartment which will have expansive views over the beach and ocean. Sea Change is the perfect place to relax and enjoy the sounds of the waves crashing onto the white sands of Trinity Beach.

Next is a Cruise to the Great Barrier Reef with “Ocean Spirit Cruises” enjoying the splendour of “Michaelmas Cay”. Tis the season... with the cool weather Coffin Bay oysters are at their best especially at C'est Bon.

This week we have the famous Coffin Bay oysters which are shucked (opened to order).

South Australian oysters are recognised as a quality seafood product, cultured in some of the cleanest most unpolluted waters in the world with the nearest land being Antarctica. At the point of sale oysters have a creamy appearance, fresh ocean smell, and unique cupped shell filled with juicy plump meat. Each growing area is distinguished by its unique and succulent South Australian taste.

Freshly shucked oysters are... succulent/sensational and mouth watering.

I lust like to forward on a few comments re: our trip to Michaelmas Cay… Having lived in Cairns for 3-4 years now and a regular visitor to the reef with various operators I have to advise you that the last trip was unbelievable in all areas, your staff is so professional and friendly with fantastic service, location was awesome and the Reef was the best I have seen ever!! The cleanliness and presentation of the boat was immaculate! Trudi and I would like to thank you alot and will be back soon.

Sunrise at 6.31am & first light at 6.09am, seen every day from a hot air balloon here in the tropics in May, is displaying some amazing colours.

Taking off on the Atherton Tablelands, west of Kuranda and Port Douglas daily, the ballooning industry keeps the most up to date weather information to determine balloon launch sites & flight plans. Temperatures this week will range from an overnight of 19 degrees to a high of 27 in Kuranda and Mareeba. We suggest a light jacket and enclosed shoes, when starting your early morning tour and definitely sunglasses and a hat for after breakfast. It will be mostly fine and sunny inland for the week ahead though you will notice a difference driving from the Atherton Tablelands back to Port Douglas where the forecast is for moderate SE winds, fresh at times along the coast.

The "Evergreen trio are back again by popular demand at Yorkys Knob Festival:

Maggie Nelson Keyboards and Vocals, Neville Hermes, Guitar, Ian Horne Reeds, Jack Dale Trombone, Keith Bone Double Bass, Maxwell Stokes Drummer.

 

Robin Aiello, Passions marine biologist and Environmental Manager, is taking a few months away from the tropics of Cairns to spread the marine conservation message farther a field. She is currently working in Antarctica onboard a world-class, 6 star Expedition Cruiseship called the Prince Albert II.

The Prince Albert II is owned by Silversea Cruises- an Italian company reknowned for its high class service and spectacular itineraries. The Prince Albert II is the newest member of their fleet, it was only launched in May of this year, and is the companys only expedition ship. She carries up to 135 passengers.

Robin was invited to join a hand picked Expedition Team to lead the ships inaugural journey to Antarctica.

Robins duties include lecturing on a range of environmental topics, leading shoreside excursions to look for penguins, seals and other wildlife, as well as driving the zodiacs. Zodiacs are rubber inflatable boats that are used to transport passengers to and from the shoreside. These zodiacs are also used to conduct cruises amongst the huge icebergs and glaciers that Antarctica is so well known for.

Robin joined the Prince Albert II in Mexico and sailed down the entire western coastline of South America to Ushuaia, Argentina the disembarkation point for Antarctica. She has just completed the inaugural trip from Ushuaia, to the Falklands, to South Georgia, to the Antarctic Peninsula and across the Drake Passage back to Ushuaia. She is currently in the middle of her second voyage back down to Antarctica. Robin will remain in Antarctica until early Jan when she will return to Cairns for a brief stop over before joining a similar ship in the Indian Ocean to take the same message of environmental and marine conservation to the islands around the Seychelles, Madagascar and East Africa.

Passions has been running an on-board shark conservation awareness program for the past 2 years. Proceeds from the sale of t-shirts and other merchandise is donated to the Oceania Chondrichthyan Society to fund student awards and research grants.

This year Passions has raised five thousand dollars.
